Description

A delightful and hearty vegetarian lasagna packed with spinach, ricotta, and marinara sauce.


Ingredients

  • 9 lasagna noodles
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1 cup grated parmesan cheese
  • 4 cups fresh spinach
  • 3 cups marinara sauce
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions; drain.
  3. In a bowl, mix ricotta cheese, spinach, oregano, garlic powder, salt, and pepper.
  4. Spread a layer of marinara sauce on the bottom of a baking dish.
  5. Layer 3 lasagna noodles over the sauce.
  6. Add half of the ricotta mixture and a third of the mozzarella cheese.
  7. Repeat the layers, ending with noodles and remaining marinara sauce on top.
  8. Sprinkle the remaining mozzarella and parmesan cheese over the top.
  9. Bake for 30-35 minutes until bubbly and golden.
  10. Let it cool for 10 minutes before serving.

Notes

This lasagna can be made a day in advance and stored in the refrigerator before baking.
