A delightful and hearty vegetarian lasagna packed with spinach, ricotta, and marinara sauce.
Ingredients

- 9 lasagna noodles
- 2 cups ricotta cheese
- 2 cups shredded mozzarella cheese
- 1 cup grated parmesan cheese
- 4 cups fresh spinach
- 3 cups marinara sauce
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the lasagna noodles according to package instructions; drain.
- In a bowl, mix ricotta cheese, spinach, oregano, garlic powder, salt, and pepper.
- Spread a layer of marinara sauce on the bottom of a baking dish.
- Layer 3 lasagna noodles over the sauce.
- Add half of the ricotta mixture and a third of the mozzarella cheese.
- Repeat the layers, ending with noodles and remaining marinara sauce on top.
- Sprinkle the remaining mozzarella and parmesan cheese over the top.
- Bake for 30-35 minutes until bubbly and golden.
- Let it cool for 10 minutes before serving.
Notes
This lasagna can be made a day in advance and stored in the refrigerator before baking.
