Ingrédients

- 4 pieces of veal shank
- 1 onion, chopped
- 1 carrot, chopped
- 1 celery stalk, chopped
- 2 cloves of garlic, minced
- 1 cup white wine
- 1 can crushed tomatoes
- Chicken broth
- Fresh parsley, chopped
- Zest of lemon
- Olive oil
- Salt and pepper
Instructions
- Preheat the oven to 180°C.
- In a large pot, heat the olive oil and brown the veal shanks on all sides.
- Remove the meat and add the onion, carrot, celery, and garlic, cooking until tender.
- Return the meat to the pot, add the white wine, and let it reduce.
- Add the crushed tomatoes and chicken broth, bring to a boil.
- Cover and place in the oven for 1.5 to 2 hours.
- Mix the chopped parsley and lemon zest before serving on top of the meat.
Notes
Serve with risotto or mashed potatoes, and consider garnishing with gremolata for freshness.
