Description

A delicious and hearty lasagna layered with fresh vegetables and rich cheese.


Ingredients

  • 9 lasagna noodles
  • 2 cups ricotta cheese
  • 2 cups mozzarella cheese, shredded
  • 1 cup Parmesan cheese, grated
  • 2 cups spinach, chopped
  • 1 zucchini, sliced
  • 1 bell pepper, diced
  • 1 cup marinara sauce
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions.
  3. Heat the olive oil in a pan and sauté the zucchini and bell pepper until tender.
  4. Mix the spinach with ricotta, Italian seasoning, salt, and pepper.
  5. Spread a layer of marinara sauce at the bottom of a baking dish.
  6. Layer 3 lasagna noodles over the sauce, followed by half of the ricotta mixture, sautéed vegetables, and a sprinkle of mozzarella.
  7. Repeat the layers, finishing with noodles and remaining marinara sauce on top.
  8. Sprinkle the remaining mozzarella and Parmesan cheese on top.
  9. Bake for 30-35 minutes until bubbly and golden on top.
  10. Let it cool for a few minutes before serving.

Notes

For a vegan version, substitute dairy cheeses with plant-based alternatives.
