Description

A fresh and luminous dessert that perfectly pairs a crunchy crust with creamy vanilla custard and juicy strawberries.


Ingredients

  • 1 2/3 cups all-purpose flour
  • 1/2 cup powdered sugar
  • A pinch of salt
  • 1/2 cup unsalted butter – very cold
  • 1 egg – at room temperature
  • 3 egg yolks
  • 2 1/2 tablespoons sugar
  • 1/4 cup cornstarch
  • 1 1/2 cups whole milk
  • 1 1/2 teaspoons vanilla paste
  • Fresh strawberries for garnish

Instructions

  1. Mix the flour, powdered sugar, and salt in a food processor.
  2. Add the cold diced butter and pulse until fine crumbs form.
  3. Add the egg and mix until the dough is smooth.
  4. Press the dough into a tart pan and refrigerate.
  5. In a bowl, whisk the egg yolks with the sugar and cornstarch.
  6. Bring the milk and vanilla paste to a boil in a saucepan.
  7. Pour the hot milk over the egg mixture while whisking.
  8. Return to the saucepan and cook over medium heat until thickened.
  9. Pour into a dish and let cool.
  10. Fill the tart shell with pastry cream and top with fresh strawberries before serving.

Notes

Serve the tart chilled or at room temperature. Garnish with mint leaves or a light fruit glaze to enhance the strawberries.
