Ingredients

- 1 2/3 cups all-purpose flour
- 1/2 cup powdered sugar
- A pinch of salt
- 1/2 cup unsalted butter – very cold
- 1 egg – at room temperature
- 3 egg yolks
- 2 1/2 tablespoons sugar
- 1/4 cup cornstarch
- 1 1/2 cups whole milk
- 1 1/2 teaspoons vanilla paste
- Fresh strawberries for garnish
Instructions
- Mix the flour, powdered sugar, and salt in a food processor.
- Add the cold diced butter and pulse until fine crumbs form.
- Add the egg and mix until the dough is smooth.
- Press the dough into a tart pan and refrigerate.
- In a bowl, whisk the egg yolks with the sugar and cornstarch.
- Bring the milk and vanilla paste to a boil in a saucepan.
- Pour the hot milk over the egg mixture while whisking.
- Return to the saucepan and cook over medium heat until thickened.
- Pour into a dish and let cool.
- Fill the tart shell with pastry cream and top with fresh strawberries before serving.
Notes
Serve the tart chilled or at room temperature. Garnish with mint leaves or a light fruit glaze to enhance the strawberries.
