Description

A refreshing and colorful summer salad combining English cucumber, cherry tomatoes, mozzarella pearls, and fresh basil, dressed with olive oil and balsamic glaze.


Ingredients

  • 1 English Cucumber
  • 1 cup Cherry Tomatoes
  • 1 cup Mozzarella Pearls (Bocconcini)
  • 1 Red Onion
  • Fresh Basil
  • 2 tablespoons Olive Oil (Extra Virgin)
  • 2 tablespoons Balsamic Glaze
  • Salt, to taste
  • Black Pepper, to taste
  • Red Chili Flakes, to taste

Instructions

  1. Wash and dry all the vegetables. Slice the English cucumber into 1/4-inch rounds.
  2. Cut the cherry tomatoes in half and finely slice the red onion.
  3. In a large salad bowl or serving dish, combine the cucumber rounds, halved tomatoes, sliced red onion, and drained mozzarella pearls.
  4. Drizzle the salad with extra virgin olive oil. Sprinkle generously with salt, coarse black pepper, and chili flakes (if desired).
  5. Gently mix the salad to coat all ingredients with oil and seasonings.
  6. Insert fresh basil leaves into the salad by tearing them to release their aroma.
  7. Just before serving, drizzle balsamic glaze over the top in a zigzag pattern.
  8. Serve immediately for maximum crunch.

Notes

For best results, use high-quality ingredients: ripe tomatoes, fresh mozzarella, and aromatic basil. Adjust seasonings to taste. Add chickpeas for extra protein if desired.
