Description

A delicious Reunionese specialty made with sausages and tomatoes, bursting with flavors and spices.


Ingredients

  • 4 sausages
  • 4 ripe tomatoes
  • 1 onion
  • 2 garlic cloves
  • 1 piece of fresh ginger
  • 1 chili (to taste)
  • Salt and pepper
  • Olive oil

Instructions

  1. Heat some olive oil in a pot and sauté the sausages until golden brown.
  2. Remove the sausages and, in the same pot, sauté the chopped onion, garlic, and grated ginger until translucent.
  3. Add the diced tomatoes and chili.
  4. Return the sausages to the pot, season with salt and pepper, and let simmer for about 30 minutes on low heat.

Notes

For added flavors, consider preparing the sauce a day in advance. Use high-quality sausages for optimal taste.
