A delicious Reunionese specialty made with sausages and tomatoes, bursting with flavors and spices.
Ingredients

- 4 sausages
- 4 ripe tomatoes
- 1 onion
- 2 garlic cloves
- 1 piece of fresh ginger
- 1 chili (to taste)
- Salt and pepper
- Olive oil
Instructions
- Heat some olive oil in a pot and sauté the sausages until golden brown.
- Remove the sausages and, in the same pot, sauté the chopped onion, garlic, and grated ginger until translucent.
- Add the diced tomatoes and chili.
- Return the sausages to the pot, season with salt and pepper, and let simmer for about 30 minutes on low heat.
Notes
For added flavors, consider preparing the sauce a day in advance. Use high-quality sausages for optimal taste.
