Description

L’Osso Buco est un plat italien savoureux à base de jarret de veau, mijoté lentement pour une viande tendre et délicieuse.


Ingrédients

Adapter les quantités
  • 4 veal Osso Buco
  • 4 garlic cloves, finely chopped
  • 2 brown onions, finely chopped
  • 5 anchovies, chopped finely
  • 200ml dry white wine
  • 2 celery sticks, finely diced
  • 2 carrots, peeled and finely diced
  • 1 stalk of parsley
  • 3 sprigs of thyme
  • 2 bay leaves
  • 1 parmesan rind
  • 700ml crushed tomatoes
  • 600ml water
  • 1 tablespoon of organic free-range chicken broth powder
  • Salt
  • Pepper
  • Olive oil

Instructions

  1. Season the veal Osso Buco with salt and pepper.
  2. Heat olive oil in a sauté pan and brown the veal on all sides.
  3. Add the chopped onions, garlic, celery, carrots, and anchovies to the pan.
  4. Pour in the dry white wine and let it simmer.
  5. Add the crushed tomatoes, water, thyme, bay leaves, and parmesan rind.
  6. Cover the pan and let it cook on low heat for about 2-3 hours until the meat is tender.

Notes

Serve with gremolata on top for added flavor. Can be paired with risotto, pasta, or polenta.
