Instructions
- Cut the aubergines into cubes and let them drain with salt.
- Heat olive oil in a large pan and sauté the onions and celery until tender.
- Add the aubergines and cook until golden.
- Incorporate chopped tomatoes, olives, and vinegar.
- Add sugar to balance the acidity.
- Simmer on low heat for about 30 minutes.
