Zaalouk is a flavorful Moroccan eggplant salad that is easy to prepare and enjoyed with bread as a light snack or side dish.

- 2 eggplants
- 3 tomatoes
- 4 garlic cloves
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/4 cup olive oil
- Salt to taste
- Pepper to taste
- Fresh coriander for garnish
Instructions
- Dice the eggplants and cook them in boiling water until tender. Drain and mash them.
- In a pan, heat the olive oil and sauté the minced garlic.
- Add the peeled and diced tomatoes, and simmer until tender.
- Stir in the mashed eggplants, cumin, paprika, salt, and pepper.
- Cook on low heat for 10-15 minutes, stirring occasionally.
- Serve hot or at room temperature, garnished with fresh coriander.
Notes
Choose firm and shiny eggplants for the best flavor. Adjust spices to your preference and add chili for heat if desired.
