Description

Zaalouk is a traditional Moroccan dip that combines rich flavors and simple ingredients, making it a perfect appetizer or side dish.


Ingredients

  • 2 aubergines
  • 3 tomates
  • 2 gousses d’ail
  • 1 oignon
  • 2 cuillères à soupe d’huile d’olive
  • 1 cuillère à café de cumin
  • 1 cuillère à café de paprika
  • Sel au goût
  • Poivre au goût
  • Coriandre fraîche pour garnir

Instructions

  1. Cut the eggplants into cubes and steam until tender.
  2. In a pan, heat the olive oil and sauté the chopped onion until translucent.
  3. Add minced garlic and peeled, diced tomatoes. Let simmer for a few minutes.
  4. Incorporate the cooked eggplants, cumin, paprika, salt, and pepper. Cook for another 10 minutes, mashing the eggplants with a fork.
  5. Serve hot or cold, garnished with fresh coriander.

Notes

Choose firm, smooth eggplants for better flavor. For more intense flavor, let the dip chill in the refrigerator for a few hours before serving. Adjust spices according to preference.
