- 2 aubergines
- 3 tomates
- 2 gousses d’ail
- 1 oignon
- 2 cuillères à soupe d’huile d’olive
- 1 cuillère à café de cumin
- 1 cuillère à café de paprika
- Sel au goût
- Poivre au goût
- Coriandre fraîche pour garnir
Instructions
- Cut the eggplants into cubes and steam until tender.
- In a pan, heat the olive oil and sauté the chopped onion until translucent.
- Add minced garlic and peeled, diced tomatoes. Let simmer for a few minutes.
- Incorporate the cooked eggplants, cumin, paprika, salt, and pepper. Cook for another 10 minutes, mashing the eggplants with a fork.
- Serve hot or cold, garnished with fresh coriander.
Notes
Choose firm, smooth eggplants for better flavor. For more intense flavor, let the dip chill in the refrigerator for a few hours before serving. Adjust spices according to preference.
