- 250g mascarpone
- 3 eggs
- 100g sugar
- 1 fresh or canned pineapple
- 140g ladyfinger cookies
- coconut flakes
- strong coffee
- cocoa powder
Instructions
- Beat the egg yolks with the sugar until the mixture whitens. Add the mascarpone and mix well.
- Whip the egg whites until stiff and gently fold them into the mixture.
- Cut the pineapple into pieces.
- Dip the biscuits in the coffee and arrange them in a dish.
- Add a layer of mascarpone cream, followed by pieces of pineapple.
- Repeat the process until all ingredients are used up.
- Sprinkle with coconut flakes and cocoa powder.
- Refrigerate for at least 240 minutes before serving.
Notes
Serve chilled and decorate with extra coconut flakes, fresh pineapple cubes, and a mint leaf if desired. Can be prepared a day in advance for better flavor.
