Description

A fresh and creamy dessert that combines the richness of mascarpone with the zest of pineapple, offering a tropical twist on the classic Italian tiramisu.


Ingredients

Scale
  • 250g mascarpone
  • 3 eggs
  • 100g sugar
  • 1 fresh or canned pineapple
  • 140g ladyfinger cookies
  • coconut flakes
  • strong coffee
  • cocoa powder

Instructions

  1. Beat the egg yolks with the sugar until the mixture whitens. Add the mascarpone and mix well.
  2. Whip the egg whites until stiff and gently fold them into the mixture.
  3. Cut the pineapple into pieces.
  4. Dip the biscuits in the coffee and arrange them in a dish.
  5. Add a layer of mascarpone cream, followed by pieces of pineapple.
  6. Repeat the process until all ingredients are used up.
  7. Sprinkle with coconut flakes and cocoa powder.
  8. Refrigerate for at least 240 minutes before serving.

Notes

Serve chilled and decorate with extra coconut flakes, fresh pineapple cubes, and a mint leaf if desired. Can be prepared a day in advance for better flavor.
