- 1.5 kg beef chuck roast
- 1 cup fresh cranberries
- 1/2 cup balsamic vinegar
- 2 tablespoons honey
- 1 onion, chopped
- 4 garlic cloves, minced
- 2 cups beef broth
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh rosemary for garnish (optional)
Instructions
- Preheat your oven to 160°C (325°F).
- In a large skillet, heat the olive oil over medium-high heat. Season the beef roast with salt and pepper, then brown it on all sides in the skillet.
- Remove the roast and place it in a Dutch oven. Add the onion and garlic to the skillet, sautéing until tender.
- Add the cranberries, balsamic vinegar, honey, and beef broth. Stir well to combine.
- Pour this mixture over the roast. Cover the Dutch oven and bake for 3 to 4 hours, or until the meat is tender.
- Serve hot, garnished with fresh rosemary if desired.
Notes
Ensure to sear the meat well to create a nice crust, which will add depth of flavor. Feel free to adjust the amount of honey and balsamic vinegar to your taste preferences.
