Ingredients

  • 1.5 kg beef chuck roast
  • 1 cup fresh cranberries
  • 1/2 cup balsamic vinegar
  • 2 tablespoons honey
  • 1 onion, chopped
  • 4 garlic cloves, minced
  • 2 cups beef broth
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh rosemary for garnish (optional)

Instructions

  1. Preheat your oven to 160°C (325°F).
  2. In a large skillet, heat the olive oil over medium-high heat. Season the beef roast with salt and pepper, then brown it on all sides in the skillet.
  3. Remove the roast and place it in a Dutch oven. Add the onion and garlic to the skillet, sautéing until tender.
  4. Add the cranberries, balsamic vinegar, honey, and beef broth. Stir well to combine.
  5. Pour this mixture over the roast. Cover the Dutch oven and bake for 3 to 4 hours, or until the meat is tender.
  6. Serve hot, garnished with fresh rosemary if desired.

Notes

Ensure to sear the meat well to create a nice crust, which will add depth of flavor. Feel free to adjust the amount of honey and balsamic vinegar to your taste preferences.
