Description

These Raspberry Bars are a simple and delicious dessert that combines a crumble and raspberry filling, making them perfect for a snack or dessert.


Ingredients

Scale
  • 120 ml coconut oil
  • 50 g almond butter
  • 60 ml maple syrup (or agave syrup)
  • 1/2 teaspoon vanilla extract
  • 150 g flour
  • 150 g rolled oats
  • 1 teaspoon baking powder
  • 1 pinch salt
  • 350 g raspberries (fresh or frozen)
  • 1 tablespoon cornstarch
  • 1 tablespoon maple syrup

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Melt the coconut oil and then add the almond butter, maple syrup, and vanilla extract.
  3. Add the flour, rolled oats, and baking powder. Mix to form a crumble-like dough.
  4. Press half of the mixture into the bottom of a mold to form the base.
  5. Mash the raspberries in a bowl, then add the cornstarch and tablespoon of maple syrup. Mix well.
  6. Pour the raspberry filling over the dough in the mold.
  7. Cover with the remaining crumble, pressing down well.
  8. Bake for 40 to 45 minutes until the top is golden brown.
  9. Allow to cool completely before unmolding and cutting into squares.

Notes

Serve the bars at room temperature. They are delicious alone or with some plain yogurt or whipped cream. For a chilled serving, place them in the fridge for 30 minutes before cutting.
