These Raspberry Bars are a simple and delicious dessert that combines a crumble and raspberry filling, making them perfect for a snack or dessert.

- 120 ml coconut oil
- 50 g almond butter
- 60 ml maple syrup (or agave syrup)
- 1/2 teaspoon vanilla extract
- 150 g flour
- 150 g rolled oats
- 1 teaspoon baking powder
- 1 pinch salt
- 350 g raspberries (fresh or frozen)
- 1 tablespoon cornstarch
- 1 tablespoon maple syrup
Instructions
- Preheat your oven to 180°C (350°F).
- Melt the coconut oil and then add the almond butter, maple syrup, and vanilla extract.
- Add the flour, rolled oats, and baking powder. Mix to form a crumble-like dough.
- Press half of the mixture into the bottom of a mold to form the base.
- Mash the raspberries in a bowl, then add the cornstarch and tablespoon of maple syrup. Mix well.
- Pour the raspberry filling over the dough in the mold.
- Cover with the remaining crumble, pressing down well.
- Bake for 40 to 45 minutes until the top is golden brown.
- Allow to cool completely before unmolding and cutting into squares.
Notes
Serve the bars at room temperature. They are delicious alone or with some plain yogurt or whipped cream. For a chilled serving, place them in the fridge for 30 minutes before cutting.
