Quinoa and Spiced Bulgur with Carrots and Chickpeas

Description

A warm and fragrant salad, perfect for a light lunch or dinner, combining quinoa and bulgur with spices, carrots, and chickpeas.


Ingredients

  • 1 cup quinoa
  • 1 cup bulgur
  • 2 carrots, sliced
  • 1 cup cooked chickpeas
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Rinse quinoa and bulgur under cold water.
  2. In a pot, add 2 cups of water and bring to a boil.
  3. Add quinoa and bulgur, reduce heat, cover, and simmer for 15-20 minutes until water is absorbed.
  4. Meanwhile, peel and slice the carrots.
  5. In a skillet, heat olive oil, add carrots and chickpeas.
  6. Season with cumin, paprika, salt, and pepper, and cook until carrots are tender.
  7. Combine the vegetables with the cooked quinoa and bulgur.
  8. Serve warm, garnished with fresh cilantro.

Notes

For added flavor, drizzle with lemon juice before serving.
