A warm and fragrant salad, perfect for a light lunch or dinner, combining quinoa and bulgur with spices, carrots, and chickpeas.
Ingredients

- 1 cup quinoa
- 1 cup bulgur
- 2 carrots, sliced
- 1 cup cooked chickpeas
- 2 tablespoons olive oil
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Rinse quinoa and bulgur under cold water.
- In a pot, add 2 cups of water and bring to a boil.
- Add quinoa and bulgur, reduce heat, cover, and simmer for 15-20 minutes until water is absorbed.
- Meanwhile, peel and slice the carrots.
- In a skillet, heat olive oil, add carrots and chickpeas.
- Season with cumin, paprika, salt, and pepper, and cook until carrots are tender.
- Combine the vegetables with the cooked quinoa and bulgur.
- Serve warm, garnished with fresh cilantro.
Notes
For added flavor, drizzle with lemon juice before serving.
