Description

A traditional Basque dish mixing fresh vegetables in a simple and flavorful preparation.


Ingredients

  • 3 bell peppers
  • 23 medium tomatoes
  • 1 large onion
  • 2 cloves garlic
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste
  • Espelette pepper (optional)

Instructions

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the chopped onions and cook until translucent.
  3. Add the diced bell peppers and cook for about 5 minutes.
  4. Incorporate the chopped tomatoes and minced garlic.
  5. Season with salt, pepper, and Espelette pepper if desired.
  6. Let simmer on low heat for 15 to 20 minutes, stirring occasionally.
  7. Serve hot as a side dish or base for other meals.

Notes

Use ripe vegetables for better flavor. Adjust the Espelette pepper according to your spice tolerance.
