Ingredients

- 3 bell peppers
- 2–3 medium tomatoes
- 1 large onion
- 2 cloves garlic
- 2 tablespoons olive oil
- Salt to taste
- Pepper to taste
- Espelette pepper (optional)
Instructions
- In a large skillet, heat the olive oil over medium heat.
- Add the chopped onions and cook until translucent.
- Add the diced bell peppers and cook for about 5 minutes.
- Incorporate the chopped tomatoes and minced garlic.
- Season with salt, pepper, and Espelette pepper if desired.
- Let simmer on low heat for 15 to 20 minutes, stirring occasionally.
- Serve hot as a side dish or base for other meals.
Notes
Use ripe vegetables for better flavor. Adjust the Espelette pepper according to your spice tolerance.
