Description

Deliciously flaky North African pastries with a savory filling, perfect for sharing.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 3/4 cup warm water
  • 1/2 pound ground meat (choice of chicken, lamb, or beef)
  • 1 cup chopped vegetables (carrots, onions, bell peppers)
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 teaspoon black pepper
  • Vegetable oil (for frying)

Instructions

  1. In a large bowl, mix flour and salt. Gradually add warm water while stirring to form a smooth dough.
  2. Knead the dough for about 10 minutes and let it rest for 30 minutes.
  3. Meanwhile, prepare the filling by cooking the ground meat with chopped vegetables and spices. Let it cool.
  4. Once the dough has rested, divide it into small balls and roll each into a thin disc.
  5. Place a spoonful of filling in the center of each disc and fold the dough to enclose the filling.
  6. Heat oil in a skillet over medium heat and cook each msemen until golden and crispy on both sides.
  7. Serve hot, with sauce or vegetables for added flavor.

Notes

For best results, ensure the dough is well-kneaded and do not overstuff the msemen to prevent tearing.
