Khizou Mchermel is a simple and fresh Moroccan carrot salad made with grated carrots, olive oil, cumin, and lemon juice.
Ingredients

- 1 teaspoon ground cumin
- 1 tablespoon lemon juice
- Salt to taste
- Fresh parsley for garnish
Instructions
- Peel and grate the carrots.
- In a bowl, mix the grated carrots, olive oil, cumin, and lemon juice.
- Season with salt to taste.
- Garnish with fresh parsley before serving.
Notes
For a brighter dish, drizzle a little more olive oil just before serving. Can be prepared a few hours in advance.
