Harira is a comforting Moroccan soup, rich in proteins, vegetables, and spices, perfect for any time of the year.
Ingredients

- 2 tablespoons olive oil
- 1 onion, finely chopped
- 2 stalks celery, chopped
- 1 carrot, chopped
- 2 cloves garlic, minced
- 1 teaspoon ground ginger
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1 can (14 oz) diced tomatoes
- 1 can (14 oz) chickpeas, drained and rinsed
- 4 cups vegetable or chicken broth
- 1/2 cup lentils
- 1/2 cup fresh parsley, chopped
- 1/2 cup fresh coriander, chopped
- Salt and pepper to taste
- Lemon wedges for serving
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the onion, celery, and carrot, and sauté until softened, about 5 minutes.
- Stir in the garlic, ginger, coriander, and cumin, and cook for another minute.
- Add the diced tomatoes and cook for another 5 minutes.
- Pour in the broth and bring to a boil.
- Add the lentils and chickpeas, reduce the heat, and simmer for about 30 minutes, or until the lentils are tender.
- Stir in the parsley and coriander, then season with salt and pepper.
- Serve hot with lemon wedges.
Notes
For a richer flavor, use homemade broth. Adjust spices to your taste, adding chili for heat if desired. You can add other vegetables like zucchini or bell peppers for variety.
