Description

Harira is a comforting Moroccan soup, rich in proteins, vegetables, and spices, perfect for any time of the year.


Ingredients

  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 2 stalks celery, chopped
  • 1 carrot, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 can (14 oz) diced tomatoes
  • 1 can (14 oz) chickpeas, drained and rinsed
  • 4 cups vegetable or chicken broth
  • 1/2 cup lentils
  • 1/2 cup fresh parsley, chopped
  • 1/2 cup fresh coriander, chopped
  • Salt and pepper to taste
  • Lemon wedges for serving

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onion, celery, and carrot, and sauté until softened, about 5 minutes.
  3. Stir in the garlic, ginger, coriander, and cumin, and cook for another minute.
  4. Add the diced tomatoes and cook for another 5 minutes.
  5. Pour in the broth and bring to a boil.
  6. Add the lentils and chickpeas, reduce the heat, and simmer for about 30 minutes, or until the lentils are tender.
  7. Stir in the parsley and coriander, then season with salt and pepper.
  8. Serve hot with lemon wedges.

Notes

For a richer flavor, use homemade broth. Adjust spices to your taste, adding chili for heat if desired. You can add other vegetables like zucchini or bell peppers for variety.
