- 150 g dark chocolate
- 3 eggs (separated into whites and yolks)
- 30 g sugar
- 200 ml heavy cream (30% fat)
- 1 pinch salt
- 6 dry biscuits or speculoos (for the base)
- Fresh fruits or chocolate shavings for decoration
Instructions
- Break the chocolate and melt gently in a bain-marie or microwave using short bursts.
- Whisk the heavy cream until stiff peaks form and refrigerate.
- Beat the egg yolks with the sugar until pale and creamy.
- Incorporate the melted chocolate into the yolk mixture, stirring well.
- Whip the egg whites with a pinch of salt until stiff peaks form. Gently fold them into the chocolate mixture.
- Fold in the whipped cream gently to retain air.
- Crumble the biscuits at the bottom of serving glasses. Pour the chocolate mousse on top.
- Refrigerate for at least 2 hours before serving.
- Decorate with fresh fruits or chocolate shavings.
