A simple and quick recipe for mini chocolate desserts that are perfect for small gatherings or effortless indulgence.


Ingredients

Scale
  • 150 g dark chocolate
  • 3 eggs (separated into whites and yolks)
  • 30 g sugar
  • 200 ml heavy cream (30% fat)
  • 1 pinch salt
  • 6 dry biscuits or speculoos (for the base)
  • Fresh fruits or chocolate shavings for decoration

Instructions

  1. Break the chocolate and melt gently in a bain-marie or microwave using short bursts.
  2. Whisk the heavy cream until stiff peaks form and refrigerate.
  3. Beat the egg yolks with the sugar until pale and creamy.
  4. Incorporate the melted chocolate into the yolk mixture, stirring well.
  5. Whip the egg whites with a pinch of salt until stiff peaks form. Gently fold them into the chocolate mixture.
  6. Fold in the whipped cream gently to retain air.
  7. Crumble the biscuits at the bottom of serving glasses. Pour the chocolate mousse on top.
  8. Refrigerate for at least 2 hours before serving.
  9. Decorate with fresh fruits or chocolate shavings.
