Instructions
- Preheat your oven to 220°C (428°F) or prepare the grill.
- Cut the zucchinis into fries (about 1 cm thick) for even cooking.
- Lightly salt the cut zucchinis and let sit for 10 minutes if they are juicy, then pat dry with paper towels.
- In a bowl, mix olive oil, salt, pepper, and any desired spices to coat each fry evenly.
- Dunk the zucchini sticks into the panko mixed with Parmesan, pressing slightly to adhere.
- Arrange the fries on a baking sheet lined with parchment paper, ensuring they aren’t overlapping.
- Bake for 20-25 minutes, turning halfway through to brown all sides.
- Serve hot and crispy.
