Ingredients

- 2 cups broccoli, steamed and chopped
- 2 large eggs
- 1 cup breadcrumbs
- 1/2 cup grated cheese
- 2 tablespoons fresh herbs (parsley, chives, basil)
- Salt, to taste
- Black pepper, to taste
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 200°C (392°F).
- Steam the broccoli until tender, then finely chop.
- In a bowl, mix the chopped broccoli with the eggs, breadcrumbs, grated cheese, herbs, salt, and pepper.
- Form patties and place them on a baking sheet lined with parchment paper.
- Drizzle with olive oil and bake for 20-25 minutes until golden.
- Serve hot.
Notes
For a lighter texture, replace some breadcrumbs with chickpea flour.
