Description

Simple and savory broccoli patties, perfect for an appetizer or light meal.


Ingredients

  • 2 cups broccoli, steamed and chopped
  • 2 large eggs
  • 1 cup breadcrumbs
  • 1/2 cup grated cheese
  • 2 tablespoons fresh herbs (parsley, chives, basil)
  • Salt, to taste
  • Black pepper, to taste
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 200°C (392°F).
  2. Steam the broccoli until tender, then finely chop.
  3. In a bowl, mix the chopped broccoli with the eggs, breadcrumbs, grated cheese, herbs, salt, and pepper.
  4. Form patties and place them on a baking sheet lined with parchment paper.
  5. Drizzle with olive oil and bake for 20-25 minutes until golden.
  6. Serve hot.

Notes

For a lighter texture, replace some breadcrumbs with chickpea flour.
