Description

Quick and fluffy mini pancakes made with ripe bananas, perfect for snacking or children’s breakfast.


Ingredients

  • 2 ripe bananas
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 egg
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • Butter or oil for cooking

Instructions

  1. Mash the bananas in a large bowl. Add the egg, milk, and vanilla, then mix well.
  2. In another bowl, combine the flour, baking powder, baking soda, and salt.
  3. Incorporate the dry ingredients into the banana mixture and mix until well combined.
  4. Heat a skillet over medium heat and add a little butter or oil.
  5. Pour small spoonfuls of batter onto the skillet to form mini pancakes.
  6. Cook until bubbles form on the surface, then flip and cook until golden brown.
  7. Serve warm and enjoy!

Notes

For best results, use very ripe bananas. Do not overmix the batter for fluffier pancakes.
