- 2 ripe bananas
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 egg
- 1/2 cup milk
- 1 teaspoon vanilla extract
- Butter or oil for cooking
Instructions
- Mash the bananas in a large bowl. Add the egg, milk, and vanilla, then mix well.
- In another bowl, combine the flour, baking powder, baking soda, and salt.
- Incorporate the dry ingredients into the banana mixture and mix until well combined.
- Heat a skillet over medium heat and add a little butter or oil.
- Pour small spoonfuls of batter onto the skillet to form mini pancakes.
- Cook until bubbles form on the surface, then flip and cook until golden brown.
- Serve warm and enjoy!
Notes
For best results, use very ripe bananas. Do not overmix the batter for fluffier pancakes.
